    This was my mother's recipe. It's a perfect light and refreshing dessert with a lemony zing. Mom made it just the way it is for weeknight dinners, but I like to dress it up with raspberry sauce (frozen raspberries in syrup, pureed and strained) and some fresh raspberries. Looks great in parfait glasses or a glass or crystal bowl for a dinner party. Preparation time includes 5 hour chilling time.

    I got this recipe from a blogspot called "Mysterious Bolivia". I have no idea whether Bolivia is any more mysterious than the rest of the planet, but judging by this recipe, they sure can cook there! I used the whole can of coconut milk, on the theory that there's no such thing as too much coconut. I use basmati rice. Be forewarned: this is rich, rich, rich!

    My mother clipped this recipe decades ago and it has been a family favorite since. It's very flexible; you can use pork tenderloin instead of chicken thighs, sweet potatoes instead of yams, any kind of apple, most kinds of dried fruit, etc. The curry flavor is mild, add more if you like!

    From a package of Aidells Chicken & Apple Sausage. Prep time includes roasting the squash: To roast the squash, split a small squash in half lengthwise, scoop out the seeds, brush cut sides with olive oil and roast on a foil lined baking sheet at 350 till tender, 45 minutes to an hour. Allow to cool, scoop out the pulp. Alternatively peel and chunk the squash (or buy it peeled and chopped) toss with olive oil and roast till tender, about 20 minutes

    An unusual recipe for wheat berries in that in contains no dried fruit. Nothing wrong with fruit but sometimes you need a side dish that isn't sweet. What I like about this recipe (apart from its goodness and healthiness) is the way you can prep the next step while the previous one is sauteing. Just start the wheat berries and the rice, heat the oil while you chop the onion and you're off! Can easily be prepared as vegan.
