    I found this recipe in my Grandmother's 1963 Better Homes & Gardens Lunches and Brunches cookbook. It was entitled Coconut Hot Cakes with Sausage (from Kona Inn, Hawaii). I don't do the coconut or sausage part - I just use the basic pancake recipe since it is SO AMAZING! I've never had pancakes nearly as good as this recipe anywhere, so I quit trying. I never, ever order pancakes in a restaurant anymore because there's no way they can be as fluffy and tasty as this recipe. (I really love this recipe - can you tell??)

    I got this recipe from one of those community cookbooks that my mother-in-law gave me. I modified it slightly to suit our personal tastes. I hadn't made it for a long time but made it this Christmas Eve to serve with cabbage rolls - it was a HUGE hit. So, I thought I would share. There are several hash brown casseroles already posted but none with bacon.

    I found this recipe in the Toronto Star newspaper when I was just a kid & have been making it ever since. I tweaked the method ever so slightly & always use Picard Peanuts (a local grower who is widely available) Jumbo Cocktail Peanuts. I won 1st place at the County Fair with it as a Junior & an Adult.     I purchased some mini-tart shells from a school fundraiser but didn't know what to do with them. But, I found this little gem in a Canadian Living Christmas Special magazine from 1982. They are really good on their own but a generous dollop of real whipped cream takes them over the top!! Very easy to make, too!
