Delish fried sandwich that is great for lunch or a hearty snack. Tastes great with turkey, mortedella, corned beef or even salami. Original recipe from Super Food Ideas magazine but adapted to my families tastes.

This recipe is from chef Damian Heads of Australian Ready Steady Cook. He served his on a bed of couscous with broad beans but because we aren't fans of broad beans, I serve this with a salad and crusty bread.

Really tasty fish bake that can be served with some steamed veggies for a light dinner. Barramundi, flathead or snapper also work in this dish.

Easy pasta bake that I often fall back on when I want dinner ready quickly. When in a rush after work I microwave the vegetables to soften but if you have time I think that the end result is better if you sauté them. Sometimes I'll add some Italian Herbs to this. But its really just a lazy dinner.

This is very simple but it tastes fantastic. It's a healthy and casual meal for when you just want to throw something together. I buy chops when on sale and take the meat off but lamb steaks etc can be used.

This is so quick and easy because I can get pre-mashed kumara in tubs in the veggie section of my local Woolworths Supermarket. If it is not available to you prep time will obviously be much longer.

I was given a whole heap of zucchini and made various slices out of them. This one turned out great and is a change from the usual zucchini, bacon and carrot version. Cheese can be easily added to suit your own tastes. Other veggies such as broccoli and capsicum work too. Inspired by an Aussie cooking mag.

An old Aussie fav, the rissole, has been given a bit of a bashing. This updated version is one my entire family loved. It was inspired by a recipe seen in an Australian food mag but adapted to my families tastes.

I just love vanilla vodka! This drink is so refreshing with the strawberries and guava juice. They go down very easily.

"Glorious pumpkin shells summon up the delights of autumn and seem too good to throw away. Use one instead as a serving dish. Pumpkin and pasta make marvelous partners, especially as a main course served from the baked shell." From 'Best-Ever Cook's Collection- Pasta' but adapted to our own tastes.

Copy Cat recipe of the meatloaf my mother used to make. She mentioned once that the BBQ sauce had coffee in it and I have been trying to crack it for years. I couldn't find one that was quite right but I think this is pretty close so I am posting it to keep it handy.
