This is a vegetarian version of a Phase 1 recipe from the South Beach Diet book. I used Quorn brand mock chicken, but any non-breaded variety should do fine as well. I actually enjoyed this so much that I plan on making it long after Phase 1 is over!
I found this online at zenhabits.net and made it for a Memorial Day cookout. It's easy to make, delicious, and vegan friendly! You don't have to simmer this for a full 30 minutes, but it allows the flavors to come together better the longer you leave it.
Delicious carrot cake from the May/June 2006 issue of Vegetarian Times. I made it for my dad's birthday and it was a major hit. I listed cardamom as optional because I didn't have it on hand and the recipe still tasted great without it.
