Chunks of beef are simmered in beer with scallions, garlic, tomatoes, cumin and cilantro. Serve this over rice with a little aji picante and you'll have a delicious comfort dish, Latin style!

This is a cross between Chili Relleno and traditional American style stuffed peppers. On ce again I was throwing stuff together trying to be creative while staying low carb. I have some Ideas on how to improve this when I'm not restricting my carbs but this was really yummy.

The nori sheets can be found in asian markets and the directions do say to use a sushi mat, but I don't have one so I'll have to find some other substitute.
My doctor just put me on a low calorie diet so I've been collecting recipes for foods that will satisfy my love of food as well as not put me over the caloric limit! I came across this recipe and they are YUMMY! Plus according to the original recipe they are only 128 calories each!
I think I'm incapable of following a recipe as it is written, this meatloaf recipe is the result of that habit. I started with a different recipe and tweaked it so much that it doesn't even resemble the original anymore, lol. Hope you enjoy it as much as I do. I sometimes use ground venison instead of beef. Makes great stuffed pepper filling too.
