The original recipe was for mocha shortbread (from a mini book called Elinor Klivans Cookies) As I was giving some to other people, I used chocolate instead as I thought it would be a safer bet. So I subsituted the instant coffee for good quality cocoa powder. As I was mixing it all by hand I dissolved the cocoa in hot water so it was easier to cream with the butter! The recipe is for shortbread fingers but I also made some xmas shapes. When the shapes came out they had lost the definition so I scraped off some edges with a serated knife to get a better shape. I doubled up the recipe but didn't need to double up the melted chocolate as it was plenty. I think I'll make these next year too!

This is my husband's special dish he makes us for a treat. The flavours are lovely and he impressed me with it before we were married - I couldn't believe he'd cooked it! (I've since learned he is a good cook but keeps it quiet) He normally serves with some fresh steamed broccoli. As its so easy to make he passed the recipe onto a friend who wanted to impress his girlfriend but he didn't serve with any veggies and it does need something with it that's not baked - although she was impressed with the dish she told me. You can play around with the quantities to suit you as long as the basic ingredents are there. Enjoy!

    Recipe #187488

Made for a dinner party for friends. Simple but lovely. We served with creamed spinach, carrots and new potatoes.

    Recipe #187487

This is my lovely bonkers mum's recipe!!! It is easy to make and always turns out good and moist.

    Recipe #186873

I adapted this recipe as a number of people I cooked it for didn't like mushrooms but I didn't note down the original version so can't tell you what it was I'm afraid! I made this for 4 friends before and I 'm sure we had some left over so I've put the portions as 5. I personally add some extra cream in as I like the texture quite creamy and also once I added some chopped asparagus too which worked really well.

    Recipe #186495

This is a recipe my husband made and it was given to him from his mum. I am careful to not be tempted to make more than one dish per person or to add more cream / salmon as its already quite a rich dish. I serve with crusty bread.

    Recipe #183383

I thought this pie was lovely! It is meant to make enough for 8 to 10 people, but in normal greedy style I made it for my husband and I (we ate some over 2 meals as it was lovely cold or hot and froze a bit to use for a quick snack one day).

When on holiday in Lake Como, Italy we went to an Italian cookery lesson with a local restaurant chef. He taught us how to make risotto alla parmigiana and then he also added other ingredients so that we ended up trying 3 other different flavours which you might want to also try (notes about these below). My favourites were the risotto alla parmigiana and the blue cheese flavour which was delicious! I have listed ingredients for the Risotto Alla Parmigiana but at the end there are details of the other flavours that you can try. I'm sorry that the measurements aren't specific but when we tried to pin him down he just said to add as required - typical chef ;) I would suggest to adapt to suit your taste (you might need to have some more butter as backup if you need it).

    Recipe #183381

This is a recipe that my mum gave me and it makes a very comforting meal on a cold day. I am not certain if you can buy Cumberland sausages in other countries (doubtful!) but if not then go for a thick, heavily seasoned / peppery sausage. What I call Butter Beans I think are called White Lima Beans in the US. I think Worcestershire sauce is widely available but if not use a brown spicy sauce. Lastly, I think cider is referred to as "hard cider" in the US so just to clarify it's the version with alcohol for this recipe! I normally serve with baked potatoes.

    Recipe #179033

This is a low fat recipe using Marmite. For those who don't know Marmite it is dark brown-colored savory spread made from yeast and it has a strong, slightly salty flavor. Not easily available in all countries I'm afraid.

I believe that squash is similar to what we call marrow in England. This is a low fat and healthy recipe which is nice served with roasted meats.

    Recipe #178761

This is one my brother cooked us and it was lovely - I think he got it straight from a recipe book but not sure which one.
