This recipe makes enough to stuff a 12-15 pound bird. To make in the oven, omit the water and add one 14 1/2 ounce can of chicken broth to the mixture. Place the stuffing into a buttered 3-quart casserole, cover and cook for 30 minutes at 325 degrees; uncover and cook another 20 minutes.
An easy soup to put together after work. I chop the onion, celery and garlic all together in my food processor. You can add leftover meat such as pork or beef, or vegetables such as corn, beans or potatoes. Try it topped with cilantro, sour cream, avocado or cheddar cheese.
Every once in a while you run across a young one who will not eat anything green - imagine that. When you're a Mom who loves vegetables and cares about the health of your child this can be soooo frustrating. This was one of my early successes at getting my DS to eat green beans. It's based on two premises that worked for me: 1) I called it hors d'ouevers and let him eat them at the table as I was putting the finishing touches on dinner. 2) I let him eat this with his fingers. Don't know why but finger foods seem more attractive to kids.
P.S. DS has grown to love all kinds of vegies now!
