Peshwari naans are naan breads filled with coconut and raisin and are divine! Here the rice is cooked with the same ingredients to make a sweet rice which goes very well with curries such as Korma. Feel free to add more almonds and sultanas if you are partial to them.
From the GI diet organisation. This vegetarian chili recipe has been spiced up in a Mexican style by adding cocoa power to the mix. Although many people find this a surprising combination, it adds a unique richness to the sauce.
An easy side dish. Quinoa (pronounced keen-wah) is a high protein grain that contains all 8 essential amino acids, this makes it great for vegetarian diets. It is gluten free and low GI.
I like this with some grilled haloumi
If you want a really filling, low GI meal suitable for vegetarians, then you will love this baked sweet potato stuffed with chickpeas. From the GIdiet.org. This keeps well in the fridge and reheats wonderfully for posh beans on toast
This is a work in progress. I'm low carbing it at the minute so this is where I'm keeping a note of tasty new variations I find. The basic method is the same for all just vary the topping depending on what you fancy.
A stunning centrepeice from Rose Elliott. It can be made ahead and frozen, allow 2 hours defrosting time and freeze in a rigid container to protect it. Try to use triple distilled rose water if you can find it.
This s really rich cake and can stand to be served on its own. If you want to serve veg with it buttered baby spinach or roasted potatoes work well. This came from Rose Elliott's Vegetarian supercook and made up part of a recent dinner party menu. I haven't tried this with light ricotta so I really dont know how it would turn out.
