    What is meatloaf but a way to use up items in the fridge? This recipe uses a little bit of what I had in the fridge tonight. My family will eat meatloaf only in muffin form. I'm sure it could be made in a loaf if cooked longer, about an hour. I put ketchup on only half the muffins for immediate eating (and next day leftovers) and then leave the rest bare to freeze.

    This recipe came about because I had leftover salmon. My family is really bad about eating leftover fish so I wanted a way to kind of hide it. I had just bought tons of cream cheese and i had green onions and parsley from the garden. Time stated does not include puff pastry thaw time.

    A German spice cookie that my grandma used to make that makes me feel all warm and cozy. I called her for the recipe and she kept saying it's from Martha Croeni, which is a relative that I've never met, but I like her cookies. The recipe calls for the cookies to be rolled in powdered sugar, but Grandma always glazed them because she thought the powdered sugar too messy. Grandma rarely wrote full instructions for recipes, just the ingredients, so the instructions are guesses on my part. Also, the recipe calls for 1/4 to 1/2 tsp. of each spice, but I like it spicy, so I go with the 1/2 tsp. (sometimes even a little more).

    I've had friends make this recipe without the bacon and it just isn't the same. If you'd like to cut fat, use turkey bacon and decrease the oil and butter the onion is sauteed in. Adjust the amount of tomatoes/puree depending on how thick you like your sauce. May use Italian sausage instead of ground beef, but you may need to adjust herb quantities.
