This is a very flavorful, easy meal that goes over well with the kids. Serve over rice or pasta. If you'd like it thicker, add some tomato paste. I like it more soupy so it soaks into the rice. Makes a good freezer meal. Adapted from Saving Dinner.
This was a meatball soup recipe that I adapted to just use in marinara sauce and now am adapting again to make as a meatloaf. Works well as a freezer meal. Serve with my mashed potatoes! Tip: When the meatloaf is done cooking, use some of the grease & some flour & water to make some gravy.
My grandma used to make these mashed potatoes for me when I was a little girl. Sometimes she'd make a whole 5 lb dish and bring it to my house. Before she died she gave me the recipe. I'm the only one who has it in the family...until now. Note that this recipe is wonderful for Shepherd's Pie and used in my Turkey Potpie .
I've tried many different spinach-artichoke dips, but this is my favorite. It's similar to the kind you'd get in a restaurant. Easy to make additional and freeze.
You can serve it with chips or make as a spinach artichoke toast. The toast idea came from Holly Clegg's Freezer Friendly Meals.
This is a recipe I have been tweaking for a few years. It resembles the Apple Pancake we would get wen I was a kid at the Pancake House in Wilmette, Il. Use a cast iron skillet. The glaze can be used instead of a syrup. This is a fun dish to make on the weekend.
