My husband was half way through making cookies from my regular recipe when he realized we didn't have enough butter. I suggested substituting applesauce for the difference and we found we loved the texture of these cakey chocolate chip cookies.

    Recipe #359918

Creamy, fat-free, low-cal, and a serving+ of veggies! Great for a rainy winters day. Vegetable broth or water may be substituted for chicken broth to make dish entirely vegetarian.

    Recipe #284276

A hearty meal a man can make from "A Man, A Can, A Plan." My honey makes it for us, but we use individual baking dishes and I measure out my ingredients since I'm watching my weight, and don't top mine with the bread which drops the calories down to 250 per serving- and it has lots of fiber and protein to boot!

    Recipe #169380

    Meat and potatoes, baby!

    Recipe #169379

Inspired by Food Network's "Boy Meets Grill," Episode Where's The Duck?, this recipe was tweaked a bit and the serving size changed to be more appropriate for a light meal with friends.

    Recipe #169209

From "A Man, A Can, A Plan," made by my Brucie. Prep time does not include time to freeze. Make at least 8 hours ahead of time to allow for chilling.

    Recipe #168989

These light and fresh bites don't require a fork and are easy to pick up and carry at a cocktail or dinner party and can be made a day or two in advance. Or reduce the recipe size for an endulgent lunch for yourself! Endive is a flavorful member of the lettuce family that serves as a natural and edible bowl for the crab salad. Look for small heads of endive with no wilting leaves and a bright color. The original recipe called for heavy cream, but that has been replaced with evaporated milk with the same results and less calories and fat. Silk tofu works as well, too, for added protein.

    Recipe #168983

A fresh way to prepare lamb chops for a family dinner or a dinner party. Elegant but simple.

    Recipe #168980

From Rachel Ray's "Thirty Minute Meals" Low cal but high flavor, this was originally posted for use with lamb, but I apply this to beef with delicious results!

    Recipe #168979

This recipe makes 3 cheesecakes- enough for one for the home and two to give away, plenty for a holiday get together, or a great donation to the neighborhood bake sale. It's also great topped with canned cherry pie filling (my family's favorite) or blueberry or strawberry pie filling. (This trick also hides any cracks if the top of the cheesecake doesn't come out perfect- don't worry, I won't tell) Premade store bought cookie crusts take all of the difficulty out of the prep and sour cream adds an extra touch of creaminess and makes mixing the batter super easy!
