I love this recipe. I got it from the Taste of Home web site, it was a recipe submitted to them by Diane Witmer of Spencer, Wisconsin. I added 1 extra can of green chilies, used Monterey Pepper Jack, Cheddar cheese and used 10 in flour tortillas. This was creamy, cheesy, just wonderful!
This is a great side dish for any kind of meal! Elegant, Easy, Special Occasion or just to go with Steak, Fish or just about anything. This recipe came from my neighbor. Her father was in Love with this recipe so whenever any of us made this we just called it "Alvin's Potatoes". You can adjust to # of people and tweak with just about anything. If you want to go "really" easy - sprinkle a package of potato toppers over sour cream and pop into the oven for the full baking time. You can also adjust baking temp. & time if you want to bake along with your meat.
This pie is Wonderful... I made for my adult children & they fell in love with it. Surprisingly the men LOVED it. I also made it for my friends mothers day celebration (about 20 people, made two pies) and her they all really loved it too. When there was only 1/2 pie left she took it and hid it from everyone so she could take it home LOL
I loved this recipe, it was so good. I did use fresh broccoli and steamed it until crispy soft. I didn't use as many potatoes, about 1 1/2 cups, I used about 1/2 cup carrots and added sliced mushrooms & chopped cooked chicken.
I don't usually use/like recipes with canned soup or Velveeta BUT this was great. I gave some to my neighbor who only makes homemade scratch soups (as well as I) and she just loved it.
I don't remember where I found this recipe but when I did it sounded so good that I printed it out. So glad I did. LOL
