    Easy and quick to make, I got this recipe from a supermarket catalogue. It makes a large number of bites, and I have halved the recipe successfully. Copha is vegetable shortening - solid vegetable oil.

    This makes a creamy, chewy nougat. It gets better the more times you make it - I get requests for this one quite often. It makes enough to take some to a party and have some left at home! The recipe comes from the Weekend Australian magazine, Oct 2005. Read through the recipe first and have everything measured out before you begin. It is advisable to use a candy thermometer to ensure the correct temperature has been reached. The rice paper can usually be bought at a cake decorating shop. The syrup will take longer to reach 150 than the honey will to reach 135.

    Easy truffle to make for Christmas, quick to make and impressive looking - and tasting! I have had the recipe for years and made them for the first time last year. I have made them often since - you don't have to wait for Christmas to make them. You can also use milk chocolate without losing any flavour. I like to use dark fruitcake. I have rolled them in cocoa, topped with white icing and some red and green icing to look like berries and leaves - mini plum puddings.

    Quick, creamy casserole made in one pot! I made it up as I went the first time - it came out so good my husband who only eats a small dinner went back for seconds. I don't even serve it with anything - it's all in the pot! Times are a guess -will try and time it next time. You can add different veges if you like - just keep the potato as it makes it thicker as it breaks down.
