    I learned this recipe from Rick Bayless, one of my favorite chefs. It is very unconventional, but the results are consistently delicious. It is a little more time consuming than my "Easy Mexican Rice" posted on this site, but well worth the effort, if you want to serve the very best accompaniment to your enchiladas, tamales or chiles rellenos.

    I brought along this sweet-and-savory Chicken Salad on a camping trip and my brother-in-law whined that he hated chicken salad. Needless to say, he gobbled up the sandwiches without complaint! It makes for a beautiful luncheon or shower dish, particularly served with petite rolls or over lettuce leaves and topped with ripe avocado. By the way....Mindy's my hairdresser; her husband loves to make this salad.

    From This recipe is a copy-cat of the wonderful avocado sauce served at El Pollo Loco restaurants. It is great with taquitos, chicken or shrimp quesadillas. Don't expect an extremely thick guacamole, this is a thinner salsa--the consistency of the sauce you usually get with taquitos. Also, the heat of fresh jalapenos varies greatly. If you like milder salsas, remove the seeds; if you like it hot, don't bother removing them.
