These are pretty yummy. The original recipe had all heavy cream and I have lightened it up somewhat. These are rich so save then for special meals. I do not add salt as I have used salted stock, and cheese. You may adjust the seasoning to your taste.
This comes from an appetizer book belonging toone of my daughters. You could certainly use half wholewheat flour if you choose. Also although pear is sublime in this dish,thinly sliced apple or whit grapes coud work.
My grandson who is 4 loves these and so does everyone else.. If you stir a little chipotle paste into some mayonaise you get a nice spicy dipping sauce, although GS prefers them plain. We have had a of trouble getting variety into his diet and this is one of my successes. You can experiment with the spice ratios depending on your taste.
Oka is a Canadian cheese made in the Province of Quebec. It originated in 1893. It has creamy mild flavor and melts well. These tarts would be great in midsummer when the tomatoes are at their best. This is totally delicious. It is a lower fat version of Potato Gratin. I bake it in a 10" deep dish pyrex pie plate. It is fairly easy with a food processor or mandoline to do the slicing. You will have to use your common sense with the stock when making, as casserole dishes and potatoes vary in size (the stock should come just barely below the surface of the top layer of potato). Fresh Rosemary finely chopped is also delicious.
My husband, who is a chef, developed this recipe. This is one of our favorite ways to present carrots. You can use frozen baby carrots, fresh baby carrots or simply cut diagonally into 1" pieces. This recipe uses Macadamia nuts, but pecans work very well, also. This is packed with flavor, and compliments lots of entrees.
