Very filling, a low calorie comfort food that you can eat at any time of day. Recipe is easily doubled, trippled, etc. I like to make this in my toaster oven but it can easily be made in a toaster and a broiler or on a grill.
Don't knock it till you try it! This is extremely low cal. If you use fat free cottage cheese you get 40 calories for 1/4 cup. Boullion cube is 5 calories and 3 cups of lettuce is under 20 calories. So the whole things is less than 65 calories but tastes rich and creamy.
Who says you have to spend a long time cooking a tasty, healthy, filling breakfast? Not me! You can easily double this recipe, just use a bigger bowl. Feel free to change up ingredients too; these are just my personal favourites. The red sauce in the pictures is just something I blended up with fresh tomatoes, etc. You can use whatever you want with this versatile dish.

The nestle baking cocoa only has 15 calories per tablespoon and i used only about about 1/4 of that. Equal 0 calorie sweetener makes for a pleasant addition to satisfy your sweet tooth.
This is rice that goes practically with anything. You can have it as a side for meat, or mix it with seafood, and it tastes just as great.
