I came up with this recipe tonight when I was cleaning out my fridge and realized I had leftover corn, cooked rice, and 1lb of ground beef that needed to be cooked soon! Even my young boys enjoy this concoction, and I hope you will too. The cooking time is just an estimate, I wasn't keeping an eye on the clock.
This recipe came from my husband's grandmother, whom we call Mimmie. I wanted a recipe that didn't require cooking with wine, and that I had all the ingredients on hand. She pulled through for me, so I am accrediting her with this. I do leave the onion out of my recipe, because of allergies, but I included it in the ingredients and directions for those who like it. I made this for my son today when he requested pizza, and I didn't have the ingredients on hand to make the pizza dough. I used to make this growing up, and I love it. You can use either an english muffin, or two pieces of bread, whichever you have on hand and prefer. I prefer to toast the english muffin or bread lightly before adding toppings. Use any toppings you prefer.

This is a great dish my father used to make all the time. Smells great cooking, and tastes even better then it looks. I use spicy sausage, but sweet would taste great as well. Would work fine with regular sausge links as well, though I prefer Moose or Venison personally.
