I had a craving for Chipotle Mayo and could not find anything in my local grocery store. After peeking at several different types of recipes, I came up with my own variation. Its pretty spicy but my DH and I love it. I thought I would share it and see if anyone else may enjoy it as well. This can be stored for up to a week. I have even used this as a dip! Enjoy!
A light and lovely fresh tasting salad. I had this in a restaurant recently and went about making one myself. I am still playing with variations but judging by how much my DH ate, this one is a winner! I enjoy the cheese and pecans in the salad but you can mix it up and use walnuts and skip the cheese. It all depends on your personal preferences.
I found this recipe in a friends cookbook, but I tweaked it to my liking. I love a rich lemon flavor so feel free to cut back if it is too much for you. These are divine and a hit with everyone I shared them with!!
