These muffins are healthy and surprisingly light and moist! I made them for the first time today plain, and they came out great, but i think adding some sruff would be better - like chopped walnuts or fruit..
This is a bar recipe I found on a health and fitness site. The original recipe made it a protein bar, but when I made it (ages ago) I didn't have any so I left it out. If you want to make it a protein bar simply add 2 cups of protein powder and add an extra 1/2 cup of honey. This is a good bar for straight after an intense workout, but it tastes like a dessert so even if you're not active you can make it just as a snack bar or treat.
A really tasty soup I got from one of my cookbooks. The parsley, mint and garlic give it a really nice flavor, so people who aren't even a big fan of spinach will probably love this soup. It's also extremely healthy to boot!
The amounts listed are only general, experiment to suit your own taste - like more garlic, more mint, less parsley, etc..
