    I use Anaheim Chillis or Hot Banana Peppers for this recipe, but you can use any pepper of your choice. Be very careful when seeding the peppers. It is important to wear gloves and not touch your face. If you do get pepper burn on your skin, rub olive oil on the affected area. I make these to freeze.

    I triple this recipe, individually wrap the blintzes in waxed paper, and store them in the freezer. Defrost 2-3 for a great, special breakfast (or anytime of day!). You can microwave them, but they are best when cooked in a pan with some butter until they are golden brown. A little prep work now yields a rewarding meal later! Crepe recipe from Joy of Cooking... The amount of filling depends on how big your pan was and how many crepes broke during the process (one of my favorite childhood memories was hoping my mom broke a lot!)

    I have been working on perfecting the perfect crustless quiche recipe for years. I always use spinach, but I bought some Rainbow Swiss Chard at the local farmer's market today, and I thought I'd give it a try in quiche. I used Rainbow Chard (pink/yellow/white/orange stems---- BEAUTIFUL), but you can use any chard (or try substituting other greens) I do notice that fresh greens give a much better taste than frozen greens though!

    I love cumin; its smokiness goes very well with chicken fajitas. The orange juice also gives this dish some depth. I serve w/ tortillas, lettuce, salsa, cheddar cheese, and sour cream.     This bread is a combination of zucchini and banana bread, and it is a wonderful way to use up old bananas and dip into that summer harvest of zucchini. The bread tastes more like banana bread than zucchini bread, but it has the added nutritional benefits of vegetables. This bread is lower in fat that the standard banana/zucchini bread because applesauce replaces some of the oil in the recipe. Still using some oil, however, will prevent the bread from getting rubbery. Experiment by using pumpkin instead of bananas during the autumn months or by adding walnuts and dates! This recipe makes 2 loaves. Enjoy!

    What a great summer dinner! These chicken breasts are spicy and savory, and they go excellent with the cool refreshing mint sauce. Don't be fooled by the mint sauce, however, as it has a surprising bite of its own. This recipe is inspired by Bobby Flay's Spanish rubbed chicken breast recipe. I lightened it up by substituting some water for olive oil in the sauce. I served it with my refreshing spinach & chickpea salad!

    This salad is very refreshing and versatile. It is perfect for those warm summer days. It is very light, but it may be moistened with some extra virgin olive oil or topped with cheese (feta would go nicely). I served it with toasted italian bread in a bruschetta like-way. Enjoy!
