    Basic recipe is from Pioneer Woman but I altered it a little. I had to splurge since it was our first fresh green beans for the summer so I used bacon grease. YUM Next time olive oil.

    This recipe I believe originated with The Barefoot Contessa, so we have to continue to give her the credit. I've roasted lots of different veggies but never broccoli----this is the only way I will prepare it from now on. It is just that good! The quantity is flexible, just adjust the ingredients to match the amount of broccoli you're roasting.

    I know there are a lot of yummy variations of this, but thought I would post my own. Simple, versatile, healthy----and there you go! I used slices of red and green pepper as well as red onion. My DH, who doesn't like peppers or onions, suggested I use more----it was excellent with the combo of chicken, pineapple and BBQ sauce. No pots, pans or bowls and on the grill----my favorite way of cooking! Make as many as you want, no brainer, I made 8 for lunches.

    Working on making meals just using what I have in my kitchen. This one is a total winner! Any good cook knows how to tweak a recipe and this one is very forgiving. Exchange--raw onion, raw potato, shredded frozen potato, different herbs--whatever. But this concoction was what I had on hand; and it turned out well enough to post. I really feel the can of cheddar cheese soup (that I've had in my cupboard waiting for a use) made the difference. Hope you agree!

(no offense RZ!) Per the nutrition facts on the lean pork packaging, there are 4 grams of fat and 180 calories total for the pork; plus the minimal amount the other ingredients contribute. Hence my praise for the low fat healthy recipe. :)
