    Found this recipe at http://www.thebakingbeauties.com/2010/06/gluten-free-penne-with-chicken-and-pesto.html... I didn't need it to be gluten free though so I used regular penne pasta. I also left the broccoli out and served it on the side. It was really delicious and since I didn't see anything just like it on here I wanted to add it for safekeeping. Super easy weeknight dinner, too! Tip: I buy the large container of pesto from Costco, spoon it into an ice cube tray, and freeze. When they are frozen, I pop them into a big ziploc and keep them in the freezer... fresh pesto whenever I need it and easy to throw into the saute pan or stock pot!

    On a recent trip to Seattle we were lucky enough to visit Beecher's Handmade Cheese at Pike Place Market. They made the BEST mac and cheese I have ever had... and believe me I've had a LOT of mac and cheese! Imagine my delight when I found that they published their recipe on their website! So, here it is... of course you have to substitute locally found cheeses for their cheeses but I'm sure it will be just as delicious.

    I found this recipe on www.foodnouveau.com and I finally got around to trying it last night... absolutely delicious! My daughter says it tastes just like the Bolognese we've had in Italy. The surprise ingredient is milk... who knew? Don't rush this sauce... it really needs those 4 hours on a low simmer to develop all the wonderful flavors.     This is my mom's apple cake recipe... it's really moist and rich and I can't stay away from it when she bakes it! It freezes really well and can be baked in any kind of pan as long as you adjust the baking time. I like it with just the raisins but you can add nuts and/or chocolate chips if you like.
