This is my take on a James Beard recipe. So simple and quick, very few ingredients. This is the dish that turned me into a fish lover. Trick is to have everything ready to go when you start. It's fast from start to table.

I found this recipe on Epicurious several years ago, it always satisfies. A little extra work is SOOO worth it in the end. Use a dark lager and get the good thick chops. Yummm-O Prep time does not include marinating time.

This is just an easy mouth-pleasing dish. We particularly like this in summer with a side of tomato salad, corn on the cob. Recipe is based on just the two of us, haven't tried to increase it myself. I fix it "by eye" so measurements are as close as I can guestimate. As always, please alter to your own personal tastes.

I almost didn't try this recipe, I just couldn't get my head around fish and worcestershire. So glad I tried it..I found the original recipe on a card at the seafood counter at my grocery store years ago. I've added butter and adjust the amount up or down depending on number of filets being cooked. I adjust Tabasco carefully. !!

This is from Country Recipes, by Land O Lakes. We use it often in summer or when we just don't want to use the oven. It's very very good, and easy. Can use margarine in place of butter.

We much prefer fresh tartar sauce to jarred, and I was looking a new recipes for the same, and they all seemed to be just one item different from each other...so I combined the ingredients that our house would like best and created yet another tartar sauce, but this one has been voted "Don't Lose"...a high mark here. I even had some left over and the next evening, I simply opened tuna, drained, and added the leftover sauce. Voila. I got 2'fers....LOL....this stored well overnight, didn't separate, and didn't last beyond that. Hope you try!
