This is a fairly simple recipe that makes about 6 quarts of salsa, but expect it to go pretty quickly. It uses canned tomatoes for convenience, but everything else is fresh. Since they are not cooked, the onions and cilantro stay nice and crisp. This salsa will keep for several weeks or more when refrigerated.

    Recipe #173409

A very good, simple vegetarian black bean soup. Originally came from back of a box of Premium Saltines (hence the name). The recipe originally called for chicken broth, but I use vegetable broth to make it vegetarian.

    Recipe #178055

Vegetarian lasagna made with black beans, kidney beans, and ro-tel tomatoes. A modified version of a recipe from a ro-tel can.

    Recipe #178058

A little bit spicy, creamy and green. This recipe was originally a modification of the Leek and Potato Soup recipe presented on Good Eats.

    Recipe #317118

A quick, healthy vegetarian pasta casserole

    Vegetarian Spaghetti Casserole

    Recipe #448880

This recipe makes a nice, soft, spoonable cornbread. I like it much better than dry cornbreads I've made.

    Recipe #197849

Hot (both spice and temperature-wise) artichoke dip. The original recipe came from a pamphlet for d'Oni Enterprises (http://www.d-oni.com/) that I picked up at a Fiery Foods show in Austin, TX. The original recipe calls for d'Oni Burning Desire sauce, which is very good, but I've also used other hot sauces for it. Depending on the heat of the sauce, I'll use anywhere from 1 teaspoon to 1 tablespoon, so adjust to taste. Also, if you can find them, get diced Hatch green chiles.

    Recipe #349156

A nice beef chili with medium heat and a nice smoky flavor. Just won the "Most Unique Chili" award at our Girl Scout Chili Cook off.

    Recipe #260741

Straight from my Grandmother's kitchen. This is a Thanksgiving standard at our house.

    Recipe #197855

This is a very easy casserole using prepackaged ingredients. The Hash Browns I use are about 1/2 inch cubes, not shredded potatoes. Don't thaw them before mixing.

    Recipe #197851

Thick, creamy, and delicious, while also being easy to make.
