    From the First Coast News website. I had farmer's market eggplants to use and didn't want to go to the store. I just happened to have everything this recipe needed on hand (and usually do) so I tried it. My boyfriend had a late meeting and I told him I'd throw something together so he didn't have to eat fast food. He was pleasantly surprised with this 'thrown together' meal!

    Named in honor of the friend who introduced this recipe to me. It wouldn't be a party without Kitty's dip. I usually use a little more parmesan. I've also used the oscar meyer prepackaged bacon bits, which makes it much easier to prepare (and you get to eat it sooner!). There is never any left over. (In the photo, I used part of the bacon in the dip, then shaped it into a football shape and used the rest of the bacon bits on the outside as a coating. It was a hit at the superbowl party!)

    From mom. We almost never make actual cannolis with it, though (too much trouble to make or buy the shells.) It's good served dip-style with broken up waffle ice cream cones. My dad likes it on waffles for breakfast. My mom uses it as a filling for her 'Chocolate Cherry Cannoli Cake.' Cooking time is for soaking the nuts.

    From Mom - I'm not sure if this is really Pico de Gallo. I've noticed most recipes include jalapeno or some kind of chile. That's what she calls it, though, and it's perfect served with sour cream on top of her chimichangas (#157773) Mom uses Nature's seasoning on everything but I've made it with just a little garlic powder and black pepper instead and it was still pretty good. I guess you could add your choice of chile if you wanted--I've never tried!

    From Mom. This recipe is summer to me. We'd watch the tomato plants like hawks until we had enough ripe ones to make Pasta Cruda. It was always my job to go out and pick off the basil leaves (even when I go home now! I guess it's ceremonial.) It's kind of an art to figure out the perfect temperature at which to serve it--just warm enough to bring all the flavors together, but not hot enough to melt the cheese and turn the whole thing into a goopy mess. Not that the goopy mess doesn't taste good! I never bother to reheat the leftovers, it's just as good the day after as a cold salad.
