    These are low carb, so they don't have a crust. I think they are more "egg scramble" than quiche. This takes ALL DAY to do. Most of it is waiting on the oven, but it's time consuming. This is a wonderfully flexible recipe, though, and is well worth the effort. I only added types of cheese and meat for the nutrition count.

    These are actually more of a layered quesadilla. I used Recipe #204109 with soy flour for the tortillas. *prep time does not include making the tortillas!* I fried them and they were amazing! I also used my Once A Week Chicken, but you can use raw and just cook the meat. And, finally, this is not a traditional enchilada sauce. I like more kick to my sauce. I think this dish is a bit more spanish/italian than mexican. The sauce is sitll a bit complicated... I'm still working on the sauce so PLEASE comment! It was almost right, but not quite, so any ideas are more than welcome :)

    Blackberries were on sale and so after looking at a lot of BBQ recipes, I put together this recipe! I threw in a pack of blackberries - not sure if it was six or eight ounces, but it was somewhere in there :) Also, I use organic, low salt and low sugar ketchup... you might want to lower the soy sauce if you ketchup is salty.

    Being on low carb makes once a month cooking difficult. Low carb adjustments just don't freeze nicely. So instead, I've taken to cooking up about ten pounds of chicken on weekends, throwing it in the fridge, and adding it to food all week to speed up the cooking process after I get done with work. It is exceedingly simple and very delicious.

    This just popped into my head as "I must make this. NOW!" and it was amazing. I used my Once a Week Chicken, but fresh chicken would work just as easily. Leave out the jalapeno and red chili flakes for a milder dish.

    I wanted hot chocolate for dessert tonight and I am utterly stuck up about powdered cocoa. That is for beyond the direst emergency. So I made my version :) Ghiradelli makes a 100% cacao baking chocolate. It is divine. Done right, this is a fairly expensive drink, but it is worth it!

    This is a very quick and simple way to make an asian soup. I like a darker soy sauce in soups; I will mix shoyu and black soy sauce. I also prefer lower sodium because the chicken broth will have a lot of salt.Also, you can use white vinegar if you don't have rice.

    Very simple and very delicious. I use agave nectar or honey for sweetener. If you do not have dashi stock, water works but it won't have as rich a flavor. Chicken stock also works, but it can get salty with the shoyu. You can replace shoyu with any soy sauce, and you can replace mirin with a white cooking sherry.

    Made to eat with a spoon! Because I am lowering my carbs and sugars, I've dropped this to only one T honey. The original is sweeter, so feel free to go back up to three :) It's delicious sweeter, I just can't handle that much sugar.
