This is one of my favorite dishes to prepare. Crispy on the outside and soft on the inside eggplant baked with homemade marinara sauce and mozzarella cheese. If you love eggplant, make this dish, you won't be sorry! There may be a better one out there but I haven't had it, so as far as i'm concerned this is it!
These steaks are great on their own! But I like to dress mine up with some compound butter.
Note: Cooking time varies depending on the thickness of the steak, and how you like it cooked.

I got this recipe from Lidia Bastianich's cookbook. It's a great recipe, the only change I made was I added garlic (my favorite ingredient).
You can make this ahead and freeze it. So much better than jar sauce!
If you cannot get San Marzano tomatoes, I recommend Colivata or Cento brands.
I love this recipe because it's a change on the same old Italian spaghetti and meatballs (don't get me wrong I love Italian food). This recipe has bold Latin flavors. Meatballs simmered in a light tomato sauce served over white rice! Yum!
My Italian Grandpa Joey used to make this dish. I remember eating it as a kid and thinking wow how does he do it? So I had to create my own version and kick it up a notch. This is my nephew's favorite dish!
I love this recipe. You can make ahead and freeze it in batches. If you love garlic like myself, you will love this one!
I use San Marzano tomatoes because they are simply the best. But If you cannot find San Marzano tomatoes, I recommend Colivata or Cento brand crushed tomatoes.
This is my version of Bistec Empanizado. Similar to the Cuban versoin of Bistec Empanizado, except I don't use an egg wash or the cracker crumb crust. Mine is seasoned to perfection and lightly breaded in flour. It's soooooo good!
I'm not much of a dessert maker, I'm better at savory dishes, but I was watching an episode of The Pioneer Woman on the Food Network one day and she made a blackberry cobbler. It looked so easy to make and yummy, so I had to try it. I substituted blueberries for the blackberries. I made a little more batter than she did, and used a little less sugar. It was delicious! Promise!
I've been experimenting with Chinese food lately and have been dying to make fried rice. Since I had Chicken and Broccoli I needed to use up, I figured I'd make it a one pot meal. Considering this was my first time making it, it turned out really good! ;-)
An Italian-American Comfort Food. Pan seared seasoned chicken braised in a light tomato sauce with peppers, onions and herbs. To really bump up the flavor of the whole dish I served it over Angel Hair pasta Aglio Olio (garlic and oil). Delish!
I love the flavor of Chipotles in adobo sauce. But on their own they are extremely spicy. Combining them with brown sugar, the citrus and the grilling tones down the heat a bit. Though It's still pretty spicy, I happen to love this marinade and this sandwich! ;-)
I was sitting my 9 yr. old nephew and took him with me to the produce store. He was so excited to see all the fresh produce (he's just like me) and wanted to create a pasta dish. This is what we came up with, and it was sooooo good.
