    This is one of my favorite dishes to prepare. Crispy on the outside and soft on the inside eggplant baked with homemade marinara sauce and mozzarella cheese. If you love eggplant, make this dish, you won't be sorry! There may be a better one out there but I haven't had it, so as far as i'm concerned this is it!

    These steaks are great on their own! But I like to dress mine up with some compound butter. Note: Cooking time varies depending on the thickness of the steak, and how you like it cooked.     I got this recipe from Lidia Bastianich's cookbook. It's a great recipe, the only change I made was I added garlic (my favorite ingredient). You can make this ahead and freeze it. So much better than jar sauce! If you cannot get San Marzano tomatoes, I recommend Colivata or Cento brands.

    I love this recipe because it's a change on the same old Italian spaghetti and meatballs (don't get me wrong I love Italian food). This recipe has bold Latin flavors. Meatballs simmered in a light tomato sauce served over white rice! Yum!

    I love this recipe. You can make ahead and freeze it in batches. If you love garlic like myself, you will love this one! I use San Marzano tomatoes because they are simply the best. But If you cannot find San Marzano tomatoes, I recommend Colivata or Cento brand crushed tomatoes.
