I like creating new appetizers, but they need to be quick and easy. These fill the bill, but you need to be warned: they are sweet yes, but more than that, they are hot! I found these peppers at a local Latin grocery and they come from Peru, so that is how the name was created. Buy the puff pastry on your way home and by the time you get through the rush hour drive, the pastry will almost thawed and ready to use.
I found canary beans at my local market, but didn’t know what to do with them. So, I bought a pound and stuck them in my pantry. I then researched the internet and found this recipe for Peruvian Canary Bean Stew. So far, it is the one and only recipe I’ve been able to find to do something with these beans. But, perhaps it is the only recipe you’re ever going to need for them!
