    Looking for fish recipes for the barbie for when we go on holiday next year. This one is from Super Food Ideas. The recipe just specified whole baby snapper, not necessary just red snapper. NOTE - you could use a 1.5kl whole snapper and allow for 20 to 30 minutes to cook through, turning half way through the cooking time.

    We love our seafood but fresh scallops in the shell are a luxury item for us here but well maybe when we can afford I think this recipe will be delicious. This is meant for what we call an entree (1st course in a menu followed by main and dessert) but have listed as an appertizer. Allow 15 minutes cooling time (I have not in the timings).     The DH and I love salt and pepper squid or calamari and this one from Australian BH&G Diabetic Living looks to be right up our alley - we usually only cook this type of dish when we have caught fresh squid, so saving here for when the time comes. Please note that nutrition count will be way out as the oil is for deep frying and obviously won't be ingested. Serving size of 8 is based on 3 pieces per person.

    We have had an abundance of broad beans, though getting towards the end of the crop when I came across this recipe in Australian Good Food so thought I would post here for next year when the DH plans on planting more than we did this year. Please note you could make the soup the day before and serve with the soldiers the following - would advise serving soldiers hot though.

    From Australian BH&G Diabetic Living - a lovely refreshing summer dish. The recipe called for Rockmelon but food.com does not recognise and I think cantaloupe is the equivalent - rockmelon is an orange fleshed melon. There is no cooking time (unless you are making the glaze) but if not serving immediately keep chilled in the refrigerator.

    As a diabetic I appreciated any new sweet potato recipe that appears to be full of flavour and this one from Super Food Ideas I think fits the bill. INDIRECT HEAT - turn burners on 1 half of barbecue to required temperature and place baking tray on unheated side of barbecue and close hood.

    This came from Super Food Ideas and was submitted by the Portelli family for when they have family gatherings. It was suggested you could make up the mince mix the day before, cover and keep in the refrigerator. Also suggested that any excess stuffing could be put in a small baking dish, covered and bake for 30 minutes with the pumpkin. If you choose to make the mince and rice mix the day before allow about 30 minutes to cook and prepare (have not included this in the recipe as I assume it would be done while the pumpkin in baking).

    I am trying to get my diabeties under better control so I am posting recipes that are recommended for diabetics and that I think will interest me and my family (out of a family of 4 2 are diabetic and 1 is borderline).
