    I was in the mood for having eggs but I had this pepperoni sitting in my fridge and I was so craving it on pizza, but then I thought "why can't I have both?". It's not the healthiest dinner, I know, but when I'm craving food this badly I don't resist. And the result was so yummy, the egg cooked with the fat from the pepperoni that gave it a sharp taste with the sweetness of the onion and the acidity from the tomato..... Yup! Just absolutely delicious!!! Hope you enjoy my recipe :)

    This is my best recipe yet. I had Italian seasoning and drumsticks and wanted to bake them. I looked online for A LOT of recipes. Didn't find what I was looking for exactly. But through reading those recipes I managed to mix and combine. And finally ended up with this. Sadly I can't remember which recipes helped me to end up with this one but I admit I can't take all the credit. Tips: You can adjust how much of the seasoning or garlic you use just don't use too much lemon juice you don't want it to taste sour.

    I was inspired to do a Chickpea salad from this book132+ Delicious Salads, Dressings And Dips (Gabrielle's FUSS-FREE Healthy Veg Recipes) by Gabrielle Raiz. It had a Chickpea Salad with quinoa and many other veggies. But I only took view of it's ingredients like chickpea, parsley, olives. The rest I mostly made up myself and it turned out so Simple, healthy and yummy. You can adjust some of the ingredients, like add more chickpeas or use any kind of tomatoes you want (for this recipe I used grape tomatoes).
