My Uncle Dom used to make this for me all the time when I first moved out on my own and all I knew how to make were ramen noodles! This was one of the first dishes that I learned to make. It is SO delicious!
I found this in Bon Appetit magazine December 2002. I've made this for the past 2 new years eves and it's a big hit. It's well worth the time that it takes to make it. A thick layer of pure white chocolate truffle separates the amaretto-brushed layers, and a bit more truffle filling is used to flavor the whipped cream icing. For the chocolate stars, you can use 6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped

To prevent rice from sticking to the foil, spray foil with cooking spray before using. Or, use nonstick foil.
If the chicken breast halves in your market are larger than 4 oz. each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (170°F).
My 3 Boys LOVE these...they ask for them at least 2-3 times a week for breakfast. I've tried cheating a few times by purchasing the "just add water" pancake mix and they always know the difference and say they like these better! Sometimes I add mini chocolate chips to them.
I buy the baby carrots already peeled and cleaned, but you can peel and quarter large carrots if you prefer.
"House Seasoning" consists of:
1 cup of salt
1/4 cup of Pepper
1/4 cup of Garlic Powder
It can be kept in a labeled shaker on your spice rack
