    From the Reader's Digest 30-Minute Cookbook. I chose to try making this recipe because of the tantalizing photo in the book, and it was every bit as good as the picture promised -- but the BEST thing about it is, there's no pre-prep prep! Anything that gets chopped or measured can be done during cooking time. If you have a hand blender, this is easy-peasy stuff. Before preparing your other ingredients, it's best to start the stock heating first, so it boils as soon as possible. That's what makes this such a quick and easy recipe.

    A traditional Guyanese dish that I've enjoyed since childhood. This particular recipe was cobbled together by my Dad and I from several sources in my attempt to recreate this breakfast favourite -- and it ended up tasting just about perfect. The cassareep is what gives this dish has a sweet-spicy flavour, which is excellent first thing in the morning with slices of bread to soak up the juices.

    I got this recipe from "Arielle's Recipe Archives" a long time ago, but this version is modified - the original recipe uses vanilla wafers and blueberry pie filling. Cook time includes baking and refrigeration time.

    Based on a chocolate chip cookie recipe from Gregg R. Gillespie's "201 Cookies", this recipe is easy to make and eggless, so it's safe to eat. It's crumbly rather than creamy. I love to make this as a comforting snack, and I play with the quantities a little each time I make it.
