I wanted a pot roast and stew like vegetables all in one, so came up with this.
Updated Jan. 11, 2010. This produces a lot of gravy so to reduce amount a bouillon cube can be substituted for the 8 oz beef broth.
I found this recipe in Cooking Enthusiast catalog, under the title of French Influenced. Very tender meat and nice thick sauce. Wonderful flavor. The recipe did call for 2 large sprigs of fresh Rosemary and I opted to use bay leaves instead as I don't care for Rosemary.
Many variations to Ham Bone (or Hocks) and beans but this is pretty much how I remember it from my childhood. I find by not soaking the beans they have better texture and flavor.I use Great Northern Beans as my favorite choice of bean for this recipe. I have used 15 bean mix with good results just omit the ham flavor packet.
When the weather turns nippy, warm up your insides with this stew. Very good. Found this on a calendar years ago. Potatoes can be a substitution for turnips. This also can be made in a crock pot, add all ingredients cover and cook on low for 6- 8 hours.
Note: The beef base is a concentrated beef stock made by Superior Touch. Its in same location as bouillon cubes and I find it to have better flavor and not as salty.
