These are my all time favorite enchiladas. I found them on alastra.com many years ago. I leave out the green peppers and sometimes use green chili.
I had so many hot peppers, so I put this recipe together. It is simple but good.
This is an old recipe. We did not have to cook the eggs back then.
I modified the recipe to make it egg safe.
