Cabbage is a challenge for me, I love it but like to find new ways to fix it. This recipe was in an old cookbook that I have had for years but I just tried this recipe last night. I did not find anything like it on Food.com, so I am sharing it.
I saw this recipe when a friend posted it on Facebook, tried it, liked it, now I want to share it with you! Hope you enjoy it, too! The chicken stays tender and it is pretty low in calories and fat. Enjoy!
This is a light creamy version of scalloped potatoes that I made up since I could not find a recipe that I liked, even though there are many on 'Zaar for scalloped potatoes. These turned out really good, and were attractive with the bits of peeling inside.
Even though there are many recipes on 'Zaar for red cabbage, I did not find one like this...it is lower in sugar than others, and uses more spices to pump up the flavor. You can even substitute Splenda for the sugar. Hope you like this red cabbage as much as I do!
I found this recipe in a magazine article that touted it as a miracle fat-burning stew. Always on the look out for a miracle to help with weight control, I tried it and have made it several times, tweaking it to my families' tastes. I cannot vouch for its fat-burning properties, but it is tasty, high fiber and low fat. Try it, you might like it, especially if you like lentils and vegetables. This freezes well.
