    After a moment of panic, thinking I'd lost this recipe- I'm posting here for safe keeping! I love these cookies for fall holidays, and Christmas- they are so tastey and inviting. These are a soft lofty pumpkin cookie topped with a delicious maple icing. Using vegan margarine and almond milk makes them egg free, milk free and you'd never even know! I've adapted this recipe from an old Taste of Home Holiday cookbook.

    This is a healthful breakfast I make for my kids on school mornings. I double the recipe, baking it in two separate dishes and refrigerate it to use all week long. I make this throughout the school year, changing up the add-ins to keep the flavors fresh and the kiddos happy! I've used bananas and walnuts, omitting the squash, gingers, raisins and pepitas. Or chopped up strawberries and blueberries when in season for a Spring-time flavor combo. The recipe is so versatile my kids never tire of it!

    My kid's school asked that the parents send a snack in for the kids to munch during the day while they do their schoolwork since lunch is so late in the day. I found this tastey treat in a magazine from Penzey's (btw- if your not familiar with them CHECK THEM OUT!!) This is a great little snack for what I needed it for- and I can imagine a hundred ways to tweak it and use it! Add some cinnamon to the honey mixture and use dried diced apples instead of berries to make a harvest granola, or use sweetened dried coconut, dried diced pineapple and some cherry flavored dried cranberries to make a Hawiian granola. YUM!!! What a wonderfully sneaky way to get more fiber into your kid's diet!
