    A microwave sponge pudding with banana slices and caramel sauce. 30 second prep (OK 30second ish), 2.30minutes cooking and 3 minutes waiting! Found the sponge recipe on the web and the banana and caramel additions are mine! This is great to rustle up when you just need a warm cuddle from a pudding. It isn't as good as an old fashioned steamed suet pudding but we don't all have that many hours, do we?

    I found this recipe on the safe.org.nz site and found it too dry - the addition of low fat cream cheese made it just what I wanted - I take it to work to spread on toasted bagels for lunch. I use two 400g tins of lentils, rinsed and drained. I guess it could be made vegan by swapping the cheese for tofu.

    This is a batter recipe I found to use with an electric mini doughnut machine I have (a bit like a sandwich toaster but with seven rings to take a spoonful of batter each) - when I couldn't find the instruction leaflet with the recipe in it. After cooling slightly on a rack, I warm a spoonful of apricot jam with a splash of water and brush on lightly before dipping in hundreds and thousands or chocolate flakes. This quantity makes about 20, easiliy doubled if you are catering for a children's party or such.

    These were vaguely meant to be courgette fritters, I didn't have any feta so used some cream cheese I had instead - they are quite soft, almost blini-like. Great served with tzatziki. I used mint as I had some, I'd swap that for dill or maybe chives? The courgette I had was quite a large one, use more than one if your courgettes are smaller.

    My attempt to replicate the gyros (pron: yee'-ros) I've had in Monastiraki in Athens and the islands. This isn't like the minced meat (usually lamb) kebab that we would here in the UK call a doner kebab and often eat on the way home from a night in the pub. This is what you could be served if you were eating in . . . . the alternative is to have the meat, onion and tsatziki wrapped in the bread and in a twist of greaseproof paper taken to go. This was my first attempt - and I was delighted, the belly pork has just the right amount of fat after quite a long cook on the grilling machine. I didn't have tomatoes tonight - a few slices would have increased the authenticity, but the "patatas tiganites" (chips/fries) on the side, and the mustard mayo (american-style hot dog mustard would have been good, too) were just the job.

    Very simple and absolutely delicious - perfect to add to a lunch box or have with an afternoon cuppa. This recipe was given to me by Linda, my wonderful big sister. You can use cranberries or dried cherries in place of some or all of the sultanas. I like to use one cup regular oats and one cup of jumbo oats for texture.

    I'd had something similar as part of a tapas meal and thought I'd have a go. Yesterday I was given some garden fresh courgettes by a colleague and that's what set me off. I use a nonstick omelet pan that's about 8" dia and has quite steep sides.

    I concocted this with the Um Ali pudding I'd eaten in Egypt in mind - I had half a loaf of day old Turkish bread (known as Tennis Racket Bread in our house - it is oval and quilted and about the size of the head of a tennis racket). It also is like a cross between England's Bread and Butter Pudding and Bread Pudding (two similar sounding but rather different national treasures). I used nuts and fruit I had in the cupboard pretty much by the handful - I'm guessing at 1/4 to 1/2 cup most times.

    Amazingly quick, simple and delicious seedy spelt bread - I'm hoping that some friends of mine who can't tolerate wheat will be able to eat this, it does contain gluten so isn't any good for those have problems with gluten. Recipe originally comes from the Telegraph Magazine, I found it on the True Food Coop website. Seems a bit wrong that this bread is not kneaded and doesn't get left to rise yet still works so well. As I write I have a loaf cooling on the counter top calling to me! I've since read that allowing the dough to rise overnight in a cool place makes it even better - I'll be trying that when I'm not in a rush.

    Nice plain rice pudding - done in about 3hrs with just a couple of stirs (so not suitable to leave overnight or while you are out). I love to serve this warm with a big dollop of stewed apple or roasted rhubarb. This isn't very very sweet - if you like it sweeter you could add another 1/2 cup of sugar or so.

    I found and made a wonderful lentil chili recipe on the web but when I wanted to make it again I couldn't find it. This is my attempt to recreate it. It is a substantial chili that your guests might not realise has no meat in it (I do eat meat but not every day). Vary the garlic and chili to your taste - I just happened to have some harissa to hand. Cumin gives a nice warm note. It is one of those "even better next day" dishes. This makes quite a lot but I do have quite a large slow cooker. If you didn't have a slow cooker I guess you could simmer on the hob for 90mins or so?
