A lightened up version (if there can be one) of Ding Dong Cake that I found in Illinois Country Living. My family likes it for a twist on our usual rotation of chocolate desserts. :) Prep time does not include refrigeration although it does not take long since you use instant pudding.

Fudge-filled oatmeal goodness. Makes a lot so you have plenty to share. Great warm with ice cream on top (or even for breakfast since they have oatmeal :).

I make these treats for our dogs even though the diabetic one passed on years ago. Our wiener dog starts dancing around the kitchen when my food processor comes out and guards the oven as they bake. Simple to make and a good way to use up the liver from our beef.

The easiest fudgey brownies you can make without a mix. One of my most requested recipes--even my kids' friends ask for it!

This makes the best prime rib for even the toughest critics. My husband raises beef cattle so he loves good prime rib and he says this is the best he's ever had--anywhere--even at a restaurant. We like it so much that sometimes I season a regular roast this way but then slow cook it so it stays tender. The amount of seasonings here is for a roast that is around 5-7 lbs.

Melt in your mouth, yummy fudge that makes plenty to share. The easiest fudge recipe that I have ever made.

Yummy thousand island dressing lightened up. Great on sandwiches and salads.

    Recipe #480774

Copied from Delish (with my adaptations) for safekeeping in my Farmer Meals cookbook. Travels to the field well and has meat and vegetables and carbs in one dish. It also freezes well.

    Recipe #507309

People rave about this dish and it is one of the easiest things to make. I have made it in the microwave from beginning to end when I was short on time. It tastes the best, though, when you bake it in the oven. It adapts well to different temps of the oven depending on what kind of meat is cooking.
