My soon to be mother in law LOVES this, and so I am mostly posting it so she can have a go at making it. Love you Di! NOTE: For those with Gluten Allergies or Celiac, this is awesome on gluten free crackers or rolled in lettuce.

    Recipe #436070

After sitting in massage class and listening to a lecture about how our body processes proteins I became more convinced that this was my favorite meat-loaf recipe. I love meat-loaf and could eat it everyday. I started making my meat-loaf in a muffin pan because I spend a lot of time living alone and its easier to have already made portions to pull out of the fridge at the end of a day... and my favorite part of meat-loaf has always been the crusty outside and the caramelized catsup topping so I get more of my favorite part with every bite. I also add sriratcha cause I love just a little spice. NOTE: if you are Gluten Free or have Celiac MAKE SURE you are buying TVP and Oats processed in a GF facility.

    Super Easy and yummy soup

    Recipe #402659

This surprised me and I was amazed I could re-create it after my first experiment. A unique tomato based recipe that I made up one night when all I had were a collection of misc ingredients. It is the one leftover my boyfriend and I will eat time after time.

    Recipe #200212

My Boyfriends favorite, and really easy to make. Left overs are just as good. I make this for a crowd with steamed carrots and a side salad for a complete healthy meal. NOTE: for those with Gluten Allergies or Celiac, this can work with GF noodles and draining them before adding them to the pot with the chicken, however I recommend half cooking the noodles before trying to add them to the chicken... otherwise the chicken gets tough by the time the noodles are cooked.

    Recipe #154270

A Family Favorite, my mom used to make it all the time. It is really really simple. The amounts used all depend on how much sauce you want left over to reduce, so feel free to add more if you'd like. note:use low or no sodium unless you love salty foods.
