A great pasta salad Full of flavor. Great for picnics. Make a double batch to have for the whole weekend. Note: You might want to make a little extra vinaigrette. Not all pasta will soak up the Vinaigrette the same.
Manicotti (the word means "little muffs") is a Southern Italian favorite - tubes of pasta stuffed with cheese and served with a savory tomato sauce.

Recipe makes TWO casseroles (one to cook, one to freeze). Each serves 6.
Revised: Thanks to JerseyJoe's comments, I revised my reciepe. This is one of my family’s favorite seafood salad. We use can Scungilli (sliced conch - which is one of a number of different species of medium-sized to large saltwater snails). And low in calories.
