The picture of this dish was so appealing that I wanted to post it here for safe keeping. Sounds absolutely delicious and easy to make. I think it would be great for a brunch, tapas appetizer, or an addition to any light meal. You can change out the veggies in a number of ways -- just use your imagination.
This recipe comes from my Low Carb cookbook -- it says that the tester gave it a 10. This recipe is a trade-off between carbs and fat and probably needs to be a "special occasion" dish. You can substitute boneless, skinless chicken breasts for the pork chops.
Sounds interesting - placing this recipe here for future use. Combines traditional basil, pine nuts and parmesan cheese, but adds a twist with cilantro, tomatillos and jalapenos. This sauce can be served over pasta or grilled chicken, etc.
We love Chicken and Eggplant at our local Chinese food restaurant; however, I would love to make it at home. I found this recipe on the internet and it is courtesy of Panda Express (a local Chinese fast-food takeout) here. Haven't tried it yet, but placing here for safe-keeping. Prep time does not include marinating time for chicken.
