A recipe from one of my low-carb recipe cookbooks. I am trying to convert to low-carb meals and this dish sounds really appetizing to me! This dish would not only be a great breakfast recipe, but a nice brunch or supper dish as well.

I think it would be great for a brunch, tapas appetizer, or an addition to any light meal. You can change out the veggies in a number of ways -- just use your imagination.
This recipe comes from my Low Carb cookbook -- it says that the tester gave it a 10. This recipe is a trade-off between carbs and fat and probably needs to be a "special occasion" dish. You can substitute boneless, skinless chicken breasts for the pork chops.
