    I'm not a nut over butterscotch anything, but this is really good! If made with low fat cream cheese and ff ice cream topping, it can be justified (in my opinion) as being a great way to help get your daily fruit servings in. :) This is especially good with tart, crisp Granny Smith apples. 2-3 hours chilling time is recommended.

    A friend I worked with long ago brought this to a potluck. We begged her for the recipe, but she was reluctant to give it up. We wore her down and she finally gave in.     I haven't tried this yet, but wanted to save it. Taken from the Relish food magazine and created by Greg Johnson, a Seattle-based chef, he "came up with this recipe as a way to get eggs into a nice package". I'm thinking some crumbled bacon would be a tasty addtion!

    Yep, another bean salad recipe. This one is a bit different with its marinade ingredients. It's my mom's favorite for every get-together. It's also great for potlucks and picnics. I always come home with an empty bowl. Prepare ahead of time to let the flavors meld for 24 hours, then drain off the marinade juices. (Marinating time is not included in prep time listed.) It's soooo good!

    I love pancakes and try to make them as healthy as possible, keeping them light and fluffy the way pancakes should be! I'm posting this recipe just the way I found it (courtesy of Mr. Breakfast Collection), but made a few quick substitutions for what I had on hand. I used 3 egg whites that I had in the fridge from another recipe. I also made my own buttermilk using skim milk and almost 1 T. lemon juice (let it sit 10 minutes before using). I ended up with 12 good-sized cakes and froze what we didn't eat for quick weekday breakfasts. Top with fruit, real maple syrup, sf syrup or honey...whatever you like!
