Low fat and low sugar yumminess! Found in Diabetic Cooking magazine, we enjoy these not-too-sweet cake-like muffins with fresh blueberries. With just a hint of orange flavor, I think I'll add one teaspoon of orange zest next time. If you prefer a sweeter muffin, I'd suggest increasing the sugar to 1/2 cup. This recipe can make 6 jumbo muffins or 3 jumbo/ 6 regular or just 12 regular!

I haven't tried this yet, but wanted to save it. Taken from the Relish food magazine and created by Greg Johnson, a Seattle-based chef, he "came up with this recipe as a way to get eggs into a nice package". I'm thinking some crumbled bacon would be a tasty addtion!

I love pancakes and try to make them as healthy as possible, keeping them light and fluffy the way pancakes should be! I'm posting this recipe just the way I found it (courtesy of Mr. Breakfast Collection), but made a few quick substitutions for what I had on hand. I used 3 egg whites that I had in the fridge from another recipe. I also made my own buttermilk using skim milk and almost 1 T. lemon juice (let it sit 10 minutes before using). I ended up with 12 good-sized cakes and froze what we didn't eat for quick weekday breakfasts. Top with fruit, real maple syrup, sf syrup or honey...whatever you like!

I'm a soup lover and will be trying this as soon as I have left-over turkey. In the meantime, I'm posting this from Cooking Light's Nov. 08 issue. Pancetta can be subbed for the Canadian bacon.

These are so good, no one will ever know how healthy they are. I don't tell anyone! I had extra strawberries and wanted to make waffles with them, but couldn't find a recipe version that I liked, so I tweaked a few and came up with this one. This makes 3 double waffles, which is 3 servings in my house.

Kids and adults alike will be eager to walk in the door when you've got this snack waiting for them. It's not overly sweet, yet contains so many favorite ingredients to create joyful smiles. A bonus is that you can choose to make 2 loaves of bread, 15-18 muffins, or a combo of each! *Listed cooking time is for bread...muffins take just 20-25 minutes. Created for RSC #12.

Sooo good on warm toast. Or bagels. Or muffins. Or fingers! Easy too. Suggested preserve flavors are strawberry, raspberry or blueberry.

In my world, there is nothing better than the flavors of pb and chocolate! If you live in the same world, you may agree and want to try this recipe for a delectable kick-your-feet-up dessert. I found this in my KA manual with steps listed as I found them. You may need to adjust the specifics if not a using a Kitchen Aid mixer.

A warm, hearty, and healthy soup ready in a little over an hour. I use low-sodium broth and turkey ham.

Simple, yummy comfort food that's easy on the pocketbook! Just right for a quick anytime lunch. Make it healthier by using low fat cheese and mayo. Choose the amount of mayo you want. I tend to like my tuna mixture creamy, so I add the full 1/2 cup.

Who doesn't like blueberry muffins? These stay moist with the use of yogurt and the combination of tart lemon zest with the sweet glaze just melt in your mouth. LIghten up the calories with low fat yogurt and Splenda.

This is very similar to how regular white baked potatoes are made, only the insides are seasoned with milk, butter and sweet brown sugar. Fluffy, creamy and oh, so good!

I've taken this several times to gatherings and it's always cleaned up. Everyone asks for the recipe and I'm almost embarassed to say it's made from a cake mix. The recipe and instructions are made for a 15.5" x 10.5" jelly roll pan. If a different sized pan is used, you may need to adjust the baking time.

This is a great vegetarian meal in itself. Add a panini or grilled cheese to the side for those two-handed eaters in your house. Small shaped pasta such as orzo or ditalini work best, but you can experiment with others. I find the flavors meld overnight and even tastes better as left-overs.

Get out that grill and fire up your tastebuds. This side dish is simple, but full of flavor and nutrients. Leave out the chipotles, if you don't want that *bite*, but we love it! Peeling the potatoes is optional too.

Credit for this simple recipe goes to Tina Repak of Pennsylvania who entered it in the 1998 Pillsbury Bake-Off. The use of instant rice shortens your time in the kitchen to complete this creamy side dish.

Not enough pie lovers to require a full-size pie? This recipe makes enough for 4 servings and no leftovers! You might find it only serves 2 if you have hungry pie lovers.

Another Pillsbury winner...credit goes to Karen Durrett from Oregon for creating this wonderful dish in the 1994 Pillsbury Bake-Off. A *tostizza* is a combination of a pizza and a tostado. It's piled high with chicken and black beans that'll make your mouth water.
