Yes, another all-time favorite recipe for the all-time favorite cookie! I stumbled upon this "Once Upon a Chef" recipe and knew I had to try it. I'm thinking the secret ingredients are the processed oats and coconut which give the cookie a chewy inside, but a crisp outside. They are delectable! My husband, who doesn't like coconut, really loved these. I used a coffee grinder to pulverize the oatmeal since I don't have a food processor and it worked great.

Low fat and low sugar yumminess! Found in Diabetic Cooking magazine, we enjoy these not-too-sweet cake-like muffins with fresh blueberries. With just a hint of orange flavor, I think I'll add one teaspoon of orange zest next time. If you prefer a sweeter muffin, I'd suggest increasing the sugar to 1/2 cup. This recipe can make 6 jumbo muffins or 3 jumbo/ 6 regular or just 12 regular!

Yep, another bean salad recipe. This one is a bit different with its marinade ingredients. It's my mom's favorite for every get-together. It's also great for potlucks and picnics. I always come home with an empty bowl. Prepare ahead of time to let the flavors meld for 24 hours, then drain off the marinade juices. (Marinating time is not included in prep time listed.) It's soooo good!

I haven't tried this yet, but wanted to save it. Taken from the Relish food magazine and created by Greg Johnson, a Seattle-based chef, he "came up with this recipe as a way to get eggs into a nice package". I'm thinking some crumbled bacon would be a tasty addtion!

I love pancakes and try to make them as healthy as possible, keeping them light and fluffy the way pancakes should be! I'm posting this recipe just the way I found it (courtesy of Mr. Breakfast Collection), but made a few quick substitutions for what I had on hand. I used 3 egg whites that I had in the fridge from another recipe. I also made my own buttermilk using skim milk and almost 1 T. lemon juice (let it sit 10 minutes before using). I ended up with 12 good-sized cakes and froze what we didn't eat for quick weekday breakfasts. Top with fruit, real maple syrup, sf syrup or honey...whatever you like!

I'm a soup lover and will be trying this as soon as I have left-over turkey. In the meantime, I'm posting this from Cooking Light's Nov. 08 issue. Pancetta can be subbed for the Canadian bacon.

These are so good, no one will ever know how healthy they are. I don't tell anyone! I had extra strawberries and wanted to make waffles with them, but couldn't find a recipe version that I liked, so I tweaked a few and came up with this one. This makes 3 double waffles, which is 3 servings in my house.

Created for RSC #12...Summer's juicy ripe berries take center stage in this lovely dessert. Sweet strawberries and plump blueberries are layered in a cool, creamy filling between layers of softened graham crackers. Each bite brings a touch of richness that'll make your guests think you've got Emeril hiding in your kitchen pantry! This recipe can easily be cut in half and can accomodate frozen berries, but fresh are preferred. Prep time does not include the 8 hours necessary to soften the graham crackers.

Kids and adults alike will be eager to walk in the door when you've got this snack waiting for them. It's not overly sweet, yet contains so many favorite ingredients to create joyful smiles. A bonus is that you can choose to make 2 loaves of bread, 15-18 muffins, or a combo of each! *Listed cooking time is for bread...muffins take just 20-25 minutes. Created for RSC #12.

Leftover roast beef? Use it here! This recipe's been approved by the Iowa Beef Industry Council. I'm not sure how much they know about Chinese cuisine, but they do know their beef! NOTE: Rice must be cold or it will stick to the pan. Rice that is 24 hours old is suggested. Do NOT use Minute Rice.

In my world, there is nothing better than the flavors of pb and chocolate! If you live in the same world, you may agree and want to try this recipe for a delectable kick-your-feet-up dessert. I found this in my KA manual with steps listed as I found them. You may need to adjust the specifics if not a using a Kitchen Aid mixer.

Simple, yummy comfort food that's easy on the pocketbook! Just right for a quick anytime lunch. Make it healthier by using low fat cheese and mayo. Choose the amount of mayo you want. I tend to like my tuna mixture creamy, so I add the full 1/2 cup.

I'm not a nut over butterscotch anything, but this is really good! If made with low fat cream cheese and ff ice cream topping, it can be justified (in my opinion) as being a great way to help get your daily fruit servings in. :) This is especially good with tart, crisp Granny Smith apples. 2-3 hours chilling time is recommended.

Who doesn't like blueberry muffins? These stay moist with the use of yogurt and the combination of tart lemon zest with the sweet glaze just melt in your mouth. LIghten up the calories with low fat yogurt and Splenda.

A Pampered Chef recipe...a super quick meal and a good use for leftover pork. Chopped cooked chicken or shrimp can be substituted for the pork.
