My mom and I created this recipe and people rant and rave over it. You can use any pepper variation you choose too, I use all 3 for color presentation. I also use a garlic expression dressing but Italian dressing works just as well.
This is proof that vegetables DON'T make bad desserts. You wont be able to tell the difference between this pie and an apple pie. That's because when the zucchini is fried in lemon juice, it tenderizes and gets tart just like apples.
Bear with me on these, this is one of those recipes that I just throw together and don't really know the exact amount of ingredients I use. So I took a gander here, the best I can tell you is keep tasting and add more of this or that until you get the taste you like. Once you do I promise these will be a BIG hit, they are DELICIOUS!
