    Light, thin, crisp cookies, with oatmeal, pecan & cinnamon. Not at all like your average oatmeal cookie. This is Mom's recipe. They are fragile & don't keep more than a week, so I halved the recipe, making some of the measurements a little odd/picky. I like to press them with a glass, you want to get them thin, they do not spread/thin-out very much in baking. Mike's favorite cookie.

    Easy dressing to jazz up anything. Can use regular or greek yogurt, or sour cream depending on what will suit what you are putting it on. I suppose you could use mayo too, but I have not tried it. Also, I pick the vinegar to suit what I am putting it on, I've tried: white, apple cider, malt, red wine, rice, and they were all good. I take the entire can of chipotle in adobo & put it in the mini chopper & blend it into a paste. I freeze it in tablespoon portions in an ice cube tray and once frozen put them in a freezer bag to be used in sauces, or soups, etc.

    Read the recipes & did it my way. Must have sherry & Worcestershire to make it tetrazzini. Should not have any green veggies, & the cheese should be white cheese. I poached chicken breast in chicken stock & used the liquid as the broth in the recipe.

    Mike loved this. I read numerous recipes online, then did it my way. I hate ketchup & wanted to avoid using it, I think the balsamic adds the vinegar that you miss from the ketchup with a little extra sweetness & flair. I have an extensive spice rack & pantry, so substitute if needed.

    Hubby recently discovered he loves grits (he hated them several years ago when I made him try them, sshhh don't remind him of that). We have had a couple chicken & grits recipes that were spicy, one Mexican, one Cajun. He said something about Buffalo chicken with grits, rather jokingly. Since his favorite way to each chicken is buffaloed, and his favorite cheese is bleu, and they go so well together, this idea was born.

    This is a simple recipe with a spicy kick for garlic lovers. Orzo cooked in broth doesn't need draining, the flavor gets cooked into the orzo and the starch thickens it into it's own sauce. Pop the spinach in the microwave to thaw and chop chicken while waiting for broth to boil. Drain spinach and chop parsley while chicken is cooking. Easy to get on the table in under 30 minutes. Use feta in place of parmesan, add a few chopped olives & juice of one lemon to give it a Greek flair. We like it heavy on the garlic & red pepper, but can be done to your tastes. First time I made it, I thought I went too heavy and it was rather bland. If you like bolder flavors, start on the higher side of the garlic & red pepper.

    Mike's favorite bars, a combination of energy bars, granola bars & cereal bars. Also, depending on your selection of ingredients, you can go 100% natural/organic. These can be adapted to your taste swap out anything you like for the almonds and chocolate. Dried fruits, other nuts, seeds, other flavored chips, like butterscotch or cinnamon. Anything that might melt, spread into the prepared pan, everything else can be stirred into the oat mixture.

    5-Ingredient Fix Contest Entry. A perfect combination of buffalo chicken & cheesy potatoes. Easily adaptable to your tastes: Buffalo sauce, dressing, and cheese or combination of cheeses, all to your liking. We prefer Sweet Baby Rays buffalo sauce, bleu cheese salad dressing, and a combination of quesadilla cheese for its creaminess and bleu cheese crumbles. But if feeding kids I've used a mild sauce, ranch, and cheddar.

    My DH wanted brats but didn't want them in buns, or even done hash style with potatoes like we frequently do. He asked can you pu them in a casserole with maybe a little cheese & onion.
