    Food should not be complicated. This recipe is my favourite as it takes no time to make and will warm you and your loved ones on a snowy evening, or impress a guest!

    I make this recipe for muffins all the time! I like to vary it up a bit by adding either raisins or chunks of apple. My suggestions is to use a good firm apple like a cortland, but a mac would do. You can use a mixture of whole wheat and all-purpose flour, or only whole wheat. I have not tried it with only all-purpose, so I won't guarantee results. I subbed in plain applesauce for the oil, as well as Splenda brand sweetner for the sugar. I do this every time I make these muffins and they turn out perfectly!

    A favourite, simple quick dish. Best if made right before serving. You can try mixing a high quality Parmesan and provolone cheese. Do not use the shaker Parmesan, it won't have the same effect. If you can't afford the more expensive Parmesan, a white cheddar (not orange) or mozzerella will do the trick.

I use this cookbook all the time to get some good recipes that are free of common food allergens (except nuts). This is a yummy sald that is equally as god with leftover turkey or canned. I use canned in the summer as I am not cooking so many turkeys then.
