I always have a big herb garden in the summer. Basil especially just grows like crazy and I hate wasting it! A few years ago I was looking for how to freeze them, and kept reading about chopping and freezing them in water in ice cube trays or spreading them on cookie sheets to freeze, etc, etc. It just sounded like too much work. Then I stumbled across someone who claimed to do the following. It works great and tastes just as yummy as fresh! :O)

This is a recipe from Taste of Home, posted by Sara Hobbs. It can be served over greens, tucked in a pita, or rolled up in a tortilla. I'm placing it here for safe-keeping since it was really yummy! :O)

Found this recipe in Taste of Home. Placing here for safe-keeping since I haven't tried yet! I'm thinking it doesn't need the extra olive oil since the sun-dried tomatoes are not drained. When I try it, I will probably leave that out. Todd Schmeling posted this in Taste of Home. Let me know if you try this and like it! :O)

    Recipe #421862

Found in Taste of Home and putting here for safe keeping. Here is the description from the magazine, as I haven't tried it yet!! "A refrigerated crust makes it a snap to prepare this scrumptious Thai-inspired pizza. You'll love the slightly spicy peanut sauce and yummy toppings. Karen Shelton"

I found this recipe on veganrecipes-idahovegan.blogspot.com They are much quicker to put together than others I have found here on Zaar. I was looking for a quick recipe and stumbled upon this one. I didn't have exactly the ingredients called for, so I'm looking forward to trying them as written next time. I also baked them with some Pam sprayed on them instead of frying. Placing here for safekeeping! :O)

This recipe is from my sister-in-law and I've always loved it. Just finally made it for the first time today. I plan to vary the ingredients a bit next time (probably adding more dried fruit, etc.) and definitely want to add cinnamon. I also did not have stevia today, so used powdered sugar and it came out fine (though you have to use more since stevia is much sweeter than regular sugar). This does take a long time to bake, but the benefits of having no added oil is fantastic and the house smells terrific all day!! Putting here for safe keeping.

I found this recipe in the June 2009 Cooperative Living magazine. I've been holding onto it for a while and finally tried it a few nights ago. We really enjoyed it! I used whole wheat flour instead of white, and it came out really thick. I also used soy milk----and lots of it trying to thin it down!! If you use w.w. flour, I would suggest starting with 1 tablespoon. I'll be doing that next time! :O)

I made this tonight and it is super delicious!! I found this recipe on veganyumyum.com and here is her description: "When it’s summer, I can’t get enough of recipes that use up fresh tomatoes and basil. But no matter what time of year, I’m always down with quick recipes. You can make this sauce in the time it takes to boil the pasta. My whole wheat pasta cooks in 9 minutes, so this simple sauce makes a 9 minute summer meal that’s hard to beat."
