    The other night as I was making up our weekly menu I went through my recipe file. That behemoth box that was jam packed with recipes that I have collected by clipping them out of magazines or printing them off from the internet. One of my goals while going through it was to whittle it down to keep only recipes that I thought I actually might make. Little by little I am accomplishing that goal. Also organizing it a bit better. We are also trying to use the crockpot more so this one was a doubly good find! See if you can find the surprise ingredient.

    This came about one night while trying to figure out what to make with the odds and ends we had lying around in the fridge. This is what I came up with. You can change up the vegetables to suit what is lying around your pantry. For the spices, I fell back on one of my favorite mixtures: ginger, garlic, red pepper flakes and oregano but you can alter that too. If you've never tried quinoa, you are in for a treat. It has a slightly nutty, light taste and cooks up in just 15 minutes.

    This is a hearty flavorful cod dish that is easy and quick to make. The unique scent and flavor of the smoked paprika combined with the Asiago cheese makes for a different flavor profile. A side of penne pasta mixed with garlic, sundried tomatoes and kalamata olives, some sauteed zucchini along with a nice big salad and some fresh bread would round out the meal. A nice crisp white wine such as a Sauvignon Blanc pairs well with this.

    When blood oranges are in season we often buy a case of them which prompts me to invent new ways to use them before the kids gobble them up. This light salad dressing has a beautiful rosy color from the blood orange juice. It works well with green salads but would also be nice on a chicken salad.

    I came up with this recipe as an alternative to regular coleslaw. It has some of my favorite spices (cardamom, cumin, coriander and ginger) as well as a nice crunch from the pistachios and the sprouts.     This summer dish came about from not knowing what to make for dinner and searching through the cabinets. We had orzo and a can of black beans. I knew it was a success when my then 7 year old daughter had 4 helpings! This can also be used as a side dish.

    My mom makes a wonderful cole slaw using honey and apple cider vinegar. I was going to make that the other night but my husband suggested trying maple syrup. I did and it came out wonderful. Very easy and a nice change from your typical cole slaw.

    My daughter asked for a chicken salad for dinner tonight. She wanted chicken with light green lettuce leaves. When asked what flavors she wanted on the chicken, she said Asian. So here we have Hannah's Asian Chicken Strip Salad. By the way, she's 8. I don't usually measure my ingredients, I just pour until it looks right so these are guidelines more than actual measurements.

    Due to an abundance of yellow squash this summer I have been trying to come up with new ways to serve it. This particular version was quick and easy with a different flavor. Cilantro, lemon and honey keep it sweet but not too sweet. My family loved it.
